My Nana’s Breakfast Tacos

Breakfast Tacos


10 (12inch)  My Nana’s Bakery Fresh tortillas
1 (2 lb.) bag frozen cubed potatoes
8 large eggs, beaten
10 slices cooked bacon, chopped
1/4 c. milk
1 c. shredded cheese or cotija cheese
Salt and pepper
Seasoning salt
My Nana’s Salsa Fresca


In a large non-stick skillet cook potatoes according to package directions. Season with seasoning salt to taste.

Whisk beaten eggs and milk together in a large bowl.

In a large non-stick skillet, over medium-high heat, cook and scramble eggs. Season with salt and pepper to taste.

Warm tortillas and fill tacos with breakfast mixture.
